Breads

 

Honey Whole Wheat Bread
6 cups very warm water
2/3 cup oil
2/3 cup honey
2 Tblsp. Salt

Blend or mix on medium speed for 1 minute.

Add:
2 Tblsp. Do-Pep*
1/3 cup Gluten Flour*
2 Tblsp. Instant Yeast
2 cups whole-wheat flour

Mix again for 1 minute and then slowly add approximately 9 cups whole-wheat flour until sides of bowl start to be clean. Knead on medium speed for about 8-10 minutes. Shape into loafs and put into well-greased bread pans. Lightly cover bread pans with plastic wrap and let rise until doubled. Bake at 350° for 35-40 minutes.

*Note: Do-Pep and Gluten Flour can be purchased in Kitchen Specialty Stores like Magic Mill or Kitchen Kneads Store. Makes 4-6 loaves according to size of bread pans.


 

Sticky Buns
1 cup packed brown sugar
½ cup honey
½ cup butter
1 cup coarsely chopped pecans
½ cup sugar
¼ cup ground cinnamon
2 tubes (17.3 oz each) large refrigerator biscuits

In a saucepan, combine the brown sugar, honey, and butter; cook and stir until sugar is dissolved. Add the pecans. Spoon into a greased 9" x 13" baking pan. In a shallow bowl, combine sugar and cinnamon. Cut each biscuit in half; dip in cinnamon-sugar. Place, cut side down, over brown sugar mixture. Bake at 375° for 25-30 minutes or until golden brown. Invert onto a serving plate; serve warm. Make 12-16 servings.


Health and Beauty

 

Foaming Vanilla-Honey Bath
1 cup light oil (sunflower, canola, or
almond)
½ cup honey
½ cup mild liquid hand soap (Ivory)
1 tsp. vanilla

Mix all ingredients and pour into a clean bottle. To use: Shake to blend and add about ¼ cup to bath water.


 

Skin Smoothing Lotion
1 tsp. honey
1 tsp. vegetable oil
¼ tsp lemon juice
Rub it into hands, elbows, heels, and other dry spots. Leave it on for 10 minutes. Rinse off with warm water.


Main Dishes

 

BBQ Beef Balls
3 lbs. Lean ground beef
1 small can evaporated milk
1 small onion, finely chopped
2 cups oatmeal
2 eggs
2 tsp. salt

Sauce:
4 cups catsup
2 Tbsp. Liquid Smoke
1 cup honey
1 cup brown sugar
1 tsp. salt
Mix all ingredients for beef balls together and form into small 2" balls. Place then in a single layer in two 9"X13" pans. Combine ingredients for sauce then cover over beef balls with sauce and bake at 350º for one hour. (This recipe makes enough for two pans of beef balls and sauce.)


 

Honey BBQ Chicken
3 lbs. Chicken breasts or cut up chicken pieces
1 bottle of Bull's Eye Original BBQ Sauce
1 cup of honey
1 cup of brown sugar
1 tsp. Liquid Smoke

Heat sauce until sugar is dissolved. Brown chicken breasts. Put 1 cup of sauce in bottom of 9" x 13" pan and lay browned chicken breasts on top of sauce. Pour remaining sauce over top of all chicken breasts. Bake at 350° for 1 hour. This recipe can also be done in a crock-pot.


Snacks

 

Granola Bars
½ cup packed brown sugar
½ cup honey
½ cup peanut butter
½ cup raisins or peanuts, etc.
3 ½ cups granola mix (can use 2 cups oatmeal, 1 ½ cup crisped rice cereal)

Butter 9" inch square pan. Set aside. In large saucepan combine brown sugar and honey. Cook over medium heat just until boiling. Remove from heat. Stir in peanut butter until melted and blended. Stir in granola mix and raisins until well coated. Press into pan.


 

Honey Caramel Popcorn
¾ cup honey
½ light corn syrup
¾ cup brown sugar
Boil these three ingredients.
Stir in:
1 can sweetened condensed milk
Boil again and then add:
1 cube ( ½ cup) butter

Cook to soft ball stage. Stir constantly so it doesn't burn. Pour over 1 ½ gallons popped popcorn.


 

Honey Taffy Candy
1 cup honey

Cook honey to hard crack stage (285º) stirring CONSTANTLY. Pour onto well greased cookie sheet in strands. As soon as outside edges are cool enough to touch fold to center and make long ropes. Start stretching or pulling while still hot. Pull until honey becomes light and porous and small strings develop. Cut into short individual pieces.


Spreads

 

Honey Butter
½ cup butter
½ cup honey
Mix together until well blended.
